Can I use an AC breaker on a solar DC circuit?

No. AC breakers are not designed to interrupt DC arcs. Use breakers and isolators rated for the DC voltage of your string, such as 1000 V DC for most residential and commercial arrays.

What do I need between the panels and the inverter?

Typically a DC breaker or isolator for each string or MPPT, a DC surge protector, and PV fuses where required, often combined in a DCDB. DK Traders also builds DCDB boxes to order.
